It is officially soup season and this time of year always has me reaching for one of our favourites and by far one of the prettiest soups with all it’s colours, Harvest Chowder. This soup is full of delicious vegetables, many which are grown in our garden, in a silky broth topped with the always delicious bacon!

Ingredients:

  • 2 Celery Stalks diced
  • 1 medium onion diced
  • 2 tbsp flour
  • 4 cups (1 Litre) chicken broth
  • 1 large sweet potatoe
  • 1 tbsp chopped fresh thyme or 1 tsp of dried
  • 3 cups of kernelled corn Fresh or Frozen
  • 1 red pepper diced
  • 1 cup whipping cream
  • 2 cloves minced garlic (using my favourite kitchen tool, the Zoom!)
  • 1/2 cup Green onions diced

Start by frying the bacon, once cooked reomve from the pan and set aside. Discard all but 2 tbsp of the grease from the pan. Add in 1 tbsp of butter once melted add your diced Celery and Onion and cook until soft, about 12 minutes. Stir in your flour cook for 1 minute then add in the chicken broth and bring to a boil.

Stir in the diced sweet potatoe and thyme, cover and simmer until the potatoe is tender, approximately 20 minutes. Add in the red pepper, corn, whipping cream and garlic. Cook for another 5 minutes and stir in about  half of the green onions and simmer for another 5 minutes and it’s ready!

To serve top with some of the bacon bits and a few green onions.
